Dream Hotels & Resorts launches wine collection in aid of Touching Dreams

January 2026 - Dream Hotels & Resorts celebrates the introduction of Collaboráre, a South African wine served exclusively at our growing portfolio of diverse properties. Embodying the concept of collaboration and alliance, Collaboráre represents our unified mission to co-create opportunities for a brighter future.

Wine brings people together and it is in this spirit that Collaboráre was launched in 2024. A collective venture between a selected panel of our leaders, the input of winemaker, Rikus Neethling, and a name chosen amongst our teams, this project reinforces our commitment to promoting sustainable practices and social responsibility.

For every glass or bottle, 15% of the proceeds will go directly to Touching Dreams, our industry-pioneered NPC dedicated to supporting initiatives centring on youth development, community upliftment, and environmental preservation. With each glass raised, you – our guests and partners – directly contribute to these vital projects, which all play a hand in nurturing a legacy of hope for future generations.

Collaboráre Red Blend 2024

Think red in summer. Give this wine a light chill and serve it with a table of tapas for an easy, alfresco gathering with friends.

The wine shows a deep mulberry-red colour, streaked with flashes of vibrant magenta. It’s a red made for balmy summer evenings or warm winter afternoons - generous in fruit and spice, but not heavy. As Mourvèdre, Shiraz and Grenache come together, the expression is one of abundance. At cooler temperatures, the fruit leans bright and red: sweet red apple, redcurrant and cranberry. Slightly warmer, plush blueberry, ripe fig and black cherry step forward.

A faint tomato-leaf note threads through the aromatics, adding a subtle savoury freshness, while the unmistakable Mediterranean character is carried by sweet spice and a light dusting of liquorice. On the palate, the first impression is generous, with a soft wash of cinnamon-spiced berry coulis setting the tone before the wine settles into its stride. All three varieties intertwine seamlessly, delivering exactly what the nose promises. Silky, supple tannins give shape to the mix of red and black fruit, while a thread of baking spice continues through the mid-palate. Freshness adds lift, and a savoury dryness draws the wine to a mouthwatering finish.

Delicious and easy to enjoy, this is an everyday red - not overly complicated, but well balanced and made for entertaining rather than overthinking.

Collaboráre Sauvignon Blanc 2025

This is a moreish wine to keep chilled and ready - the kind you reach for when friends arrive unexpectedly. It is generous and immediately appealing, yet composed enough to hold attention beyond the first glass.

In the glass, the wine shows a cool pale lemon tone with fine green glints, breaking into brighter, light-filled shades as it’s swirled. Fresh and inviting from the outset.

The nose opens with an expressive but well-judged aromatic profile: sweet grass, lemon and grenadilla pulp, followed by lime candy dusted with a sherbet lift. As the wine settles and the temperature shifts, the aromatics reveal a gentle, sweet herbaceous note of freshly chopped green pepper and a briny hint of white asparagus.

On the palate, a welcoming sweet–sour tang holds the wine in place. It is light-footed yet persistent, with further layers of green mango, gooseberry and a sweet coating of Pink Lady apple. Lemon cordial adds a touch of sun-ripeness and a delicate note of sweet pea prevents the fruit from tipping too far. Subtle herbal brushstrokes of fennel and mint weave through, tying together yellow and green fruit.

Balanced, refreshing and easy to enjoy, this is a Sauvignon Blanc that delivers immediacy without losing its line - a natural crowd-pleaser on warm summer days, and a reliable companion well beyond them.

Collaboráre Rosé 2025

The first intriguing quality of any rosé is its colour - ranging from light salmon through ruby grapefruit to more vivid pink tones. The Collaboráre Rosé carries an allure of pale coral and ripe, juicy cantaloupe, a visual cue that invites salivation even before the wine meets the nose. A delicate rose-gold edge adds another layer of elegance.

This hue is also the result of an unusual amalgamation of grape varieties, brought together seamlessly in the blend: Cabernet Franc, Pinotage, Chenin Blanc, and Chardonnay. Each contributes its voice, yet the wine speaks as one - lending both interest and cohesion.

The first aromatic impression is playful and inviting, showing candied apple, pomegranate, and lychee sorbet when served properly chilled, evolving gently in the glass towards sun-ripe strawberry. Crunchy notes of red plum follow, moving into dried goji berry, quince preserve, and a suggestion of cinnamon-dusted pineapple - all framed by a sappy floral touch reminiscent of veld poppies.

From the start, the wine arrests the palate. A sweet-sour tang of fruit introduces layers of watermelon, mixed red berries, and a tart lift of lemon, mint, and kiwi, finishing with brisk lime and a pithy grip on the aftertaste. Acidity holds the line throughout, creating a perky lift and a dry, refreshing finish. Generously fruited yet neatly shaped, the wine closes with clarity, persistence, and poise.

Collaboráre Sparkling wine

The wine opens with a pale straw colour, shifting toward a misty green as the chilled wine frosts the glass. The bubbles are lively and refreshing, sharpening lifted notes of acacia and elderflower. Made for pure enjoyment, the fruit aromatics are gentle and clean, showcasing a crunchy Golden Delicious apple, white peach, a hint of lemon shortbread, and a faint suggestion of dried pineapple.

On the palate, citrus and tropical fruit notes make way for a greener edge, with a distinct briny note adding savoury interest to this dry sparkling wine. A fine, prickly effervescence heightens the sense of freshness, drawing out flavours of kiwi and lime, alongside the chalky bitterness of grapefruit pith. This is balanced by fresh pear with a faint biscuit-crumb undertone, lending subtle warmth and roundness without softening the wine’s zesty character.

The acidity is fresh rather than sharp, creating a mouthwatering feel that suits the immediacy of this style. The finish is deliciously dry with orchard fruit lingering lightly on the aftertaste, leaving the palate refreshed and ready for another glass. Elegant in presentation and summery in feel, this wine works effortlessly as an aperitif, for celebratory moments, or at the end of a meal to refresh the palate.
